			<content:encoded><![CDATA[<p>As a vegetarian making sure I get enough iron and protein in my diet can be a bit of a challenge at times. After all, there are only so many beans one can eat. That’s why I started to experiment with textured vegetable protein, which is made from soy beans and contains plenty of protein and fiber. Most of the carbs and almost all of the fat have been removed from tvp, making it a versatile and fairly healthy option for me. My favorite so far is this <a href="//www.hillbillyhousewife.com/tvpbeanburritomix.htm”">TVP and Bean Burrito Mix</a>, but textured vegetable protein can also be used to make anything from burgers to fake chicken nuggets.<span id="more-13"></span></p>
<p>While it is a convenient option, TVP is also a highly processed food and should not be used daily. For most of my meals, I still cook various <a href="//www.hillbillyhousewife.com/beanrecipes.htm”">bean recipes</a>, but it is nice to have some variety in my menu and I appreciate the different texture TVP gives my protein dishes. Since it is pretty bland in flavor, it is easy to season it up and make a variety of vegetarian “meat-like” dishes from chili to cheeseburgers.</p>
