Making Burritos with TVP

As a vegetarian making sure I get enough iron and protein in my diet can be a bit of a challenge at times. After all, there are only so many beans one can eat. That’s why I started to experiment with textured vegetable protein, which is made from soy beans and contains plenty of protein and fiber. Most of the carbs and almost all of the fat have been removed from tvp, making it a versatile and fairly healthy option for me. My favorite so far is this TVP and Bean Burrito Mix, but textured vegetable protein can also be used to make anything from burgers to fake chicken nuggets. (more…)
